The Anatomy of a Basic Truffle
The two essential roles
Stop reading a truffle as a recipe and read it as a cast. At its most basic level, a truffle only needs two roles — everything else builds on this base, and never replaces it.
Chocolate
Without chocolate it is not a truffle. Chocolate provides the solidity that gives the truffle form — whether it leads the flavour or only supports it.
The softener
On its own chocolate is firm and rigid. This role modifies that structure so the truffle yields and spreads flavour as it warms in the mouth.
Where you set the balance
There is no single correct ratio. Drag the balance and read what it does — the decision depends on the experience you want the truffle to have.
A truffle is not meant to be as rigid as solid chocolate. Its identity lives in how much you softened the structure — softness is flexible, but it must exist.
Two common misconceptions
Complexity determines quality.
A truffle with only its essential roles can be just as complete as one with many additions.
Softness determines legitimacy.
A truffle can be firmer or softer depending on how the two roles are balanced. Too firm and too soft only exist relative to your intention — but only after the essential softness has been achieved.
When complexity is necessary
Complexity enters for one of two reasons: a new role becomes a featured voice, or a role is added to support balance. Two goals, two structures.
A single-origin you love
Introduce multiple roles immediately and you compete with the thing you are showcasing. You are not limiting the truffle — you are protecting the voice of the chocolate.
A local coffee
Chocolate and brewed coffee alone may not balance. Decide which chocolate shares the stage — it is a structural and flavour voice — then add roles to help the two coexist.
What to have in front of you
Everything for this lesson's tasting is probably already in your kitchen.
Tasting · one coffee, four ways
Take a cup of black coffee and divide it into four small portions. Sip the black, then one of the portions, then the black again to reset your taste.
Coffee & its supporting roles
One cup of black coffee, divided and treated four ways. Rate each one, then see how everyone else's palate read them.
