Lesson 01 · Truffle Foundations
Chocolate Tasting
Learning to taste with intention
What you'll be able to do
Taste any chocolate methodically and put words to what you notice — texture, aroma, melt, and finish.
What this lesson is not
Not a scoring system, and not about deciding what counts as “good.” It’s structured observation, without judgement.

Work through the senses in order — observe first, taste last. The words come more easily when you slow the process down.
- Sight — observe before touching; record without judgement.
- Touch — handle gently; notice temperature and texture.
- Sound — break the chocolate and listen.
- Smell — smell the broken edge before tasting.
- Taste & Melt — allow it to melt; notice the first flavour, then as it melts, then the aftertaste.
